Ever since I was a little girl, I have always been fascinated by hand-pulled noodles, or “lai mein” in Cantonese. At first, I was mesmerized purely by the chef’s ability to convert a slab of dough into what seemed like millions of strands of noodles by pulling, twisting and stretching.
